4 Quick and Yummy Recipes to Bring
Your Family Together

With the kids going back to school and work kicking in to high gear again, autumn sometimes feels more like the beginning of the year than January 1st does.

So why not resolve to make things easier this fall by preparing delicious family dinners that are also quick and easy? These recipes not only account for the variability of the season’s weather—from warm Indian summer days to surprisingly cool nights, but also can be made in advance or saved for later to accommodate your whole family’s busy schedules.

You can prepare the salmon and bacon ahead and compose the salad right before serving, but the salmon and bacon taste great warm over the cool lettuce and tomato.

Salmon BLT Salad
Preparation time: 20 minutes
Serves 2-4

2 Horizon salmon filets, grilled
4 slices (turkey or beef) bacon, cooked until crisp, crumbled
lettuce
1 tomato, sliced
2 tsp. mayonnaise
freshly ground black pepper
4 slices whole grain bread, toasted

Salad:

1.

Toss lettuce leaves with mayonnaise.

2.

Arrange dressed lettuce and tomato on two plates.

3.

Place salmon filet on top and sprinkle with bacon.

4.

Season with black pepper.

5.

Serve with bread or pile ingredients in a sandwich.

Spice-Rubbed Salmon with Sweet Potato Mash
Preparation time: 40 minutes
Serves 4

The seasoning here, especially the smoky chipotle pepper will complement both the salmon and the sweet potatoes.

2 T. your favorite spice rub

OR

1/2 tsp. chipotle powder
1/2 tsp. coriander
1/4 tsp. ginger
1/4 tsp. cayenne
1/2 tsp. cumin
1/2 tsp. salt
1/2 tsp. black pepper

1 T. olive oil
4 Horizon salmon filets, defrosted

2 large yams or sweet potatoes
2 T. butter
1/4 cup milk
2 T. honey
salt and pepper to taste

1.

Cut potatoes into large chunks and place in 4-quart saucepan. Just barely cover with water. Boil until fork tender, about 15 minutes. Drain water. Mash with immersion blender or fork, right in the pot. Add butter, milk, honey, salt and pepper to taste and mix until smooth.

Brush salmon with olive oil then lightly coat with spice mix.

3.

Grill or broil filets for 6-8 minutes on each side or until opaque.

4.

Serve filets on a bed of mashed sweet potatoes.

Chicken with Grapes and Honey
Preparation time: 30 minutes
Serves 4

Cook this exotic dish right on the stovetop.

4 Horizon ABF chicken cutlets
2 T. butter
1/2 cup honey
2 T. white balsamic vinegar (or other light colored vinegar such as white wine
or cider vinegar)
1 1/2 cups grapes

1.

Brown chicken in butter in a sauté pan over medium high heat until lightly browned on both sides, about 5 minutes. Remove cutlets and set aside.

2.

Add honey and vinegar to the pan, whisk together and heat until bubbling slightly.

3.

Return chicken to pan and add grapes. Spoon sauce over chicken.

4.

Reduce heat, cover and simmer. When chicken is cooked through, remove the chicken and reduce the sauce, continue cooking it until thick.

5.

Serve over couscous.

Hoisin Chicken
Preparation time: 30 minutes
Serves 4

This Chinese-style stir-fry will taste better than take out.

1 medium onion, coarsely chopped
2 cloves garlic, minced
1 T. canola oil or cooking spray
4 Horizon ABF cutlets, defrosted and cut into 1-in. cubes
1 1/2 tsp soy sauce
1/4 tsp sesame oil (optional)
3 bell peppers (preferably 1 red, 1 yellow and 1 green) cut in 1-in. pieces
2 T. hoisin sauce (or barbecue sauce)
1--8 oz. can bamboo shoots, drained
1--8 oz. can water chestnuts, drained and sliced
3/4 cup cashew nuts

1.

Combine chicken with soy sauce and sesame oil in medium bowl.

2.

While chicken is marinating, sauté chopped onion and minced garlic in canola oil over medium heat in a wok or sauté pan until translucent.

3.

Add chicken to onions, and cook until chicken is opaque, about 8-10 minutes.

4.

Add 2 T. hoisin sauce and toss until all the chicken is coated.

5.

Add peppers to wok and cook, stirring, until peppers are just slightly tender. Add water chestnuts, bamboo shoots and cashew nuts and toss gently.

6.

Add more sauce, if desired, and toss again.

7.

Serve over rice.
